The Food & Beverage Management & Cost Control Training Course equips F&B directors, outlet managers, executive chefs, and cost controllers with the commercial methods needed to run food and beverage as a profitable department. Hotels, resorts, clubs, and catering operators across the Gulf and Africa often see busy outlets and strong guest numbers while departmental profit stays weak, because menu design, purchasing, production, and staffing decisions are taken separately and reviewed too late. The course treats these decisions as one profit system and teaches managers to read, explain, and improve it. The focus is departmental profitability, not food safety or service technique, which are treated as standards the operation must already maintain. Participants study the full cost cycle from purchasing specifications, supplier selection, and receiving through storage, issuing, and production; they build standard recipes, run yield tests, set portion standards, and compare theoretical with actual cost. Menu engineering then links each dish's contribution margin and popularity to pricing, placement, and menu redesign, so that the menu becomes the department's main profit tool rather than a simple list of dishes. Labor receives equal attention, with productivity measures, demand-based scheduling, and the true cost of split shifts, overtime, and outsourced staff. Participants also examine the economics of restaurants, banquets, room service, lounges, and contract catering, including banquet pricing, minimum spend, buffet costing, and waste control. Financial reporting follows the Uniform System of Accounts for the Lodging Industry (USALI), so that participants can read a departmental statement, analyze variances, prepare a budget and rolling forecast, and use point-of-sale data to support decisions about concepts, opening hours, and outlet viability. The course is delivered through operating case studies, costing and menu engineering exercises, variance analysis drills using sample statements, and a final profit improvement workshop. Participants leave with a standard recipe cost template, a menu engineering matrix, a purchasing and inventory control checklist, a labor scheduling model, and a departmental profit improvement plan they can adapt to their own outlets.
