Course Overview

This course develops the practical knowledge and skills required to establish, implement, maintain, and improve food safety management systems using ISO 22000 and Hazard Analysis and Critical Control Points (HACCP) principles. It focuses on identifying food safety hazards, controlling risks throughout the food chain, and establishing systematic procedures that protect consumers and support regulatory compliance. Participants examine the relationship between ISO 22000 requirements, prerequisite programmes (PRPs), operational prerequisite programmes (OPRPs), and HACCP-based hazard control. The programme covers hazard identification, risk assessment, critical control points (CCPs), critical limits, monitoring procedures, corrective actions, verification, validation, traceability, and food safety documentation. Through practical workshops and food industry scenarios, participants learn how to develop hazard analysis, establish effective control measures, respond to deviations, and evaluate system performance. Emphasis is placed on preventive controls, supplier management, hygiene practices, incident preparedness, and continuous improvement across food manufacturing, processing, storage, transportation, catering, and distribution operations.

Learning Objectives

  • Explain the principles and structure of ISO 22000 and their relationship with HACCP.
  • Identify biological, chemical, physical, and allergen-related food safety hazards.
  • Apply prerequisite programmes to establish appropriate hygienic operating conditions.
  • Conduct hazard analysis and determine suitable control measures.
  • Identify critical control points and establish measurable critical limits where required.
  • Develop monitoring, corrective action, verification, and validation procedures.
  • Establish traceability and product withdrawal or recall arrangements.
  • Apply food safety documentation and recordkeeping requirements.
  • Evaluate supplier controls, operational hygiene, and food safety risks throughout the supply chain.
  • Develop an implementation and improvement plan for a food safety management system.

Who Should Attend

Food safety and quality assurance managers. HACCP team leaders and food safety coordinators. Quality control and food inspection personnel. Food production and processing supervisors. Food manufacturing and packaging professionals. Restaurant, catering, and commercial kitchen managers. Storage, warehousing, transportation, and distribution supervisors handling food products. Procurement and supplier quality professionals in the food sector. Internal auditors and compliance personnel responsible for food safety systems. Professionals working in food laboratories, hospitality, retail food operations, and food supply chains.

Learning Outcomes

  • Interpret the core requirements of ISO 22000 and the principles of HACCP.
  • Identify potential food safety hazards at different stages of the food chain.
  • Establish prerequisite programmes appropriate to the organization's activities.
  • Conduct hazard analysis and select appropriate control measures.
  • Determine critical control points and establish critical limits where applicable.
  • Develop monitoring procedures and responses to deviations from established limits.
  • Apply verification and validation methods to evaluate food safety controls.
  • Maintain product traceability, food safety records, and recall procedures.
  • Assess food safety risks associated with suppliers, processes, equipment, and handling practices.
  • Prepare practical action plans for implementing, auditing, and continually improving a food safety management system.

Course Outline

Food Safety Fundamentals and ISO 22000 Requirements

  • Principles of food safety management and consumer protection.
  • Overview of ISO 22000 structure, scope, and key requirements.
  • Relationship between ISO 22000, HACCP, and applicable food safety regulations.
  • Understanding the food chain and organizational context.
  • Leadership, responsibilities, communication, and food safety culture.
  • Food safety management system documentation and control of documented information.
  • Practical Exercise: Conduct an initial review of a food business and identify key ISO 22000 requirements, food safety responsibilities, and implementation priorities.
Day 2

Prerequisite Programmes and Food Safety Hazard Analysis

  • Establishing prerequisite programmes (PRPs) for hygienic operations.
  • Personal hygiene, cleaning and sanitation, pest control, and waste management.
  • Facility design, equipment hygiene, maintenance, and prevention of cross-contamination.
  • Biological, chemical, physical, and allergen-related hazards.
  • Identifying hazards associated with ingredients, processing stages, packaging, storage, and distribution.
  • Assessing hazard severity and likelihood to determine appropriate controls.
  • Practical Exercise: Develop a process flow diagram and conduct a preliminary hazard analysis for a selected food product or production process.
Day 3

HACCP Plan Development and Operational Controls

  • The seven principles of HACCP and their practical application.
  • Establishing and organizing a multidisciplinary HACCP team.
  • Identifying critical control points (CCPs) using a systematic decision process.
  • Establishing critical limits and monitoring procedures for CCPs.
  • Understanding operational prerequisite programmes (OPRPs) and their role in hazard control.
  • Defining corrective actions, responsibilities, and records for deviations.
  • Practical Exercise: Develop a HACCP plan for a selected food process, including hazards, control measures, CCPs where applicable, critical limits, monitoring, and corrective actions.
Day 4

Verification, Validation, Traceability, and Incident Management

  • Distinguishing verification from validation in food safety management.
  • Reviewing monitoring records and evaluating the effectiveness of control measures.
  • Calibration and maintenance of equipment used for food safety monitoring.
  • Product identification, lot coding, and traceability throughout the supply chain.
  • Product withdrawal and recall procedures and incident response planning.
  • Managing nonconformities, root cause analysis, and corrective actions.
