This course develops the practical knowledge and skills required to establish, implement, maintain, and improve food safety management systems using ISO 22000 and Hazard Analysis and Critical Control Points (HACCP) principles. It focuses on identifying food safety hazards, controlling risks throughout the food chain, and establishing systematic procedures that protect consumers and support regulatory compliance.
Participants examine the relationship between ISO 22000 requirements, prerequisite programmes (PRPs), operational prerequisite programmes (OPRPs), and HACCP-based hazard control. The programme covers hazard identification, risk assessment, critical control points (CCPs), critical limits, monitoring procedures, corrective actions, verification, validation, traceability, and food safety documentation.
Through practical workshops and food industry scenarios, participants learn how to develop hazard analysis, establish effective control measures, respond to deviations, and evaluate system performance. Emphasis is placed on preventive controls, supplier management, hygiene practices, incident preparedness, and continuous improvement across food manufacturing, processing, storage, transportation, catering, and distribution operations.
